Super Easy Paleo Molasses Spice Cookies

Since it is FREEZING outside right now, I wanted to post these yummy spice cookies sure to warm you up! I love eating these with coffee in the morning, but they are awesome directly from the oven too. They have a wonderful crispy outside with a chewy inside. I will warn you, they are highly addictive! Of course, always eat them in moderation for a happy, healthy body.

Barefooting has been quite difficult lately with the single digit temperatures. I had to bust out my moccasins. I am actually quite surprised they keep my feet so warm, more so than my 5 fingers. I can’t wait until it warms up again so I can get some quality time soaking in electrons and feeling the dirt under my toes again. I can totally tell a difference in my health from the lack of grounding, plus shoes give me anxiety!

Back to these amazing cookies…

I adapted this recipe from Beauty & The Foodie. These cookies are nut-free, grain-free, refined-sugar free, can be dairy-free, and are considered low-glycemic because coconut palm sugar is used instead of refined white sugar.

I love these cookies not only because they are delicious but they also contain iron, calcium, and phosphorus from the molasses. Being anemic for most of my life, it is nice to find natural ways to up my iron intake. I hope you enjoy these cookies as much as we do!

Prep time: 15 minutes

Bake time: 10 minutes

Yield: 18 small cookies

Ingredients:

  • 1 stick butter, melted OR 8 tablespoons coconut oil, melted
  • 2 eggs
  • 3 tablespoons molasses
  • 1/2 cup + 1 teaspoon coconut flour
  • 2 tablespoons tapioca flour
  • 1 teaspoon baking soda
  • 1/2 cup coconut palm sugar + more to roll cookies in
  • 2 teaspoons ginger
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon sea salt

Method:

  1. Preheat oven to 350°F. {I put the stick of butter in the oven when I turn it on and it melts in about 5 minutes}
  2. Beat the eggs in a large mixing bowl. Add the melted butter and molasses. Mix well.
  3. Mix all the dry ingredients together in a separate bowl. Mix well.
  4. Then add the dry ingredients to the wet ingredients. Mix well.
  5. Sprinkle some coconut palm sugar on a large plate.
  6. Roll dough into balls with your hands {ping-pong size} and then roll them in the sugar. Then place the cookies on a greased cookie sheet. The dough may be sticky so you can put some coconut oil on your hands to help when forming the balls.
  7. Lightly press the top of each cookie just enough so the bottom of the cookie is flat.
  8. Bake for 10 minutes.
