Bacon Butternut Squash Soup

It’s getting easier and easier for my husband James to go barefoot. He recently went to the park with us and was completely barefoot the whole time. He even walked on the sidewalk and across the street barefoot for the first time. This is HUGE! I was impressed considering he is wired to put shoes on the minute he steps out the door no matter where he is going. I guess my bare feet are growing on him.

Now let’s talk about one of my favorite things… food. This recipe is hearty and very filling, perfect for Fall. I adapted it from The Food Lovers Kitchen. I like it because it is dairy-free, sugar-free, and falls within the Paleo guidelines. But most of all it tastes great and my 2-year-old loves it!

Prep time: 10 minutes

Cook time: 25 minutes

Yield: 4 large bowls

Ingredients: 

  • 1 butternut squash, skin removed and cubed
  • 5 slices bacon, chopped
  • 1 small yellow onion, chopped
  • 4 cups chicken stock {I use the stock from this Crockpot Chicken recipe}
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon sea salt
  • 1/2 teaspoon nutmeg, ground
  • 1/2 teaspoon ginger, ground
  • 2 tablespoons coconut oil or butter

 

Method:

  1. In a large frying pan, fry the bacon until fully cooked.
  2. While the bacon is frying put the onions in a large saucepan and saute in coconut oil until onions are translucent. You can caramelize them if you like. {This is where I cut the butternut squash; while everything else is cooking.}
  3. Add the cinnamon, nutmeg, salt, squash, and broth to the onions.
  4. Boil the mixture until the butternut squash is tender, about 10 minutes.
  5. Puree soup in a high-speed blender until smooth and creamy.
  6. Add the bacon and puree for a few seconds. Save some for toppings if you like.
  7. Pour back into the saucepan and let stand for 10 minutes. The soup will thicken a bit more and the bacon flavor will have time to infuse.
  8. Pour soup into deep bowls and top with chopped bacon.
  9. Serve immediately.

 

Tips:

You can eliminate the bacon if you are short on time or if you don’t have any on hand. The soup is still delicious!
